Montasio PDO can boast the denomination of" Mountain Product" since the raw material is collected and processed in mountain territory; as such it is recorded in the Register of Mountain Products. The milk is processes using delicate techniques that do not particularly disturb the original microbial and bacterial flora; the result is a cheese which is strongly characterised by the production area, the breed of the cows and the types of hay used.
Montasio PDO has a hard, compact curd, pale yellow in colour with small evenly distributed holes. The rind is smooth, elastic and light brown in colour. It has a pleasantly mild and delicate flavour reminiscent of the milk used to produce it; its aroma is delicate and slightly grassy. 
 
Ingredients: Cow's milk, salt, rennet. Preservative: Lysozyme (Egg protein). Inedible rind.
